Ingredients
- 6 oz fresh tuna
- 3 tbsp white sesame seeds
- 3 tbsp black sesame seeds
- 1-2 tbsp canola oil
- 1 oz slaw mix
- 1 oz mixed greens
- ½ red bell pepper, julienne
- ½ cup fried wonton strips
- ½ English cucumber, thinly sliced
- 1 oz Thai sweet chile sauce
- 2 scallions, thinly sliced
- kosher salt and freshly ground black pepper
Sriracha Soy Dressing
- 3 oz soy sauce
- ⅓ cup canola oil
- 2 tbsp sriracha
- ¼ cup brown sugar
- ¼ cup chopped cilantro
- 1 tbsp finely chopped garlic
- 2 oz apple cider vinegar
Instructions
- To make the dressing, whisk all ingredients together in a bowl. Season to taste.
- Season tuna with salt and pepper. Mix the sesame seeds together on a plate. Roll the tuna in the seeds, coating well on all sides.
- Place a saute pan over medium high heat. Add a tablespoon or two of canola oil (enough to coat the bottom of the pan). Carefully lay the tuna in the pan, laying it 'away' from you to avoid splashing oil on you.
- Cook for 30 seconds per side, making sure the seeds are golden brown before turning. Remove from pan to drain and cool. Carefully slice with a sharp knife into ¼ inch thick slices.
- Assemble the salad by gently mixing the slaw mix, peppers, wontons, and greens in a bowl with enough dressing to coat and a pinch of salt and pepper. Place salad mix in the middle of each plate. Shingle the cucumber slices in a half moon around one side of the salad mixture. Shingle the tuna around the other half of the plate.
- Drizzle the tuna with sweet chile sauce and garnish with extra sesame seeds and sliced scallions.
Chef Tips!
